Journey to a Berber Kitchen: More Than Just a Recipe
Unlock the secrets of authentic Berber cuisine in a warm and welcoming family setting, just a short journey to the countryside of Essaouira. With Morocco Unfiltered, you're invited into the rural home Berber sisters, where generations of culinary wisdom come to life. This is your chance to go beyond restaurants and truly connect with the heart of Moroccan food traditions.
Your Unfiltered Culinary Adventure
Your day begins with traditional mint tea and genuine smiles, making you feel instantly at home with Hafida or her sisters. Depending on the season and availability, you might then help select fresh vegetables and herbs directly from the family's garden, or learn the art of choosing the best produce at a local souk (market) alongside your hosts.
Discover the subtle art of Moroccan spice blending. The women of the family will guide you in preparing the perfect mix for your tagine, explaining the role and flavor of each ingredient. Under her expert guidance, you'll prepare a traditional Berber tagine, learning the techniques for layering flavors and slow-cooking to perfection. You'll actively participate in every step, from chopping vegetables to simmering the dish. Many tagines here are enriched with a touch of precious local Argan oil, adding a unique nutty depth.
Experience the magic of slow traditional cooking methods, often over a fire, a method that imparts an incomparable smoky flavor. The culmination of your efforts is a convivial meal, where you'll savor the delicious tagine you helped create, accompanied by freshly baked bread and lively conversation.
Meet Your Culinary Guides: Hafida & Her Family
Hafida, an accomplished cook, along with her mother and sisters, are passionate about sharing their culinary heritage. They don't just teach recipes; they share stories, laughter, and the daily rhythms of their Berber lifestyle. Their kitchen is a place of warmth and joyful exchange, where food is prepared with love and respect for tradition. They speak French, English, Arabic, and Southern Amazigh.
Why This Cooking Class is "Unfiltered"
Learn in a real family kitchen, not a professional cooking school, and understand the journey of ingredients from the earth or local market to your plate. This is a participatory experience where you do the cooking. More than a class, it’s an insight into Berber family life and hospitality, where you'll also learn how local argan oil is used to elevate traditional dishes.
